Most recipes don't fail because of a bad ingredient. They fail because something essential was never properly built.

Kitchens Matter is built on a different way of thinking about cooking. Not a list of steps in order, but five deliberate stages, each one doing a specific job that everything after it depends on. We call them gates, because you have to pass through each one properly before the next one can do its work.

Why "gates," not "steps"

A step is just something that happens in order. A gate is something you have to actually get right before what comes after it can work. You can rush a step and often get away with it. Rush a gate, under-build your aromatics, skip the toasting, add your binding liquid at the wrong moment, and no amount of good technique later in the dish can fully make up for it.

It's not just for savoury cooking

It's tempting to assume a framework like this is really about curries and stews, and that baking is its own separate world. It isn't. A cake needs its aromatics too, vanilla, zest, warm spice, built in early, doing the same job Gate 01 does in a curry. A custard or a pastry cream is doing exactly the same work as a stock or a coconut milk: carrying and binding everything else together. The vocabulary changes. The five jobs don't.
