Every dish has a foundation, and it gets built earlier than most people think. Gate 01 is that foundation, the aromatics in savoury cooking, the vanilla and zest in baking. Not simply “the first thing you do,” but the flavour that everything else in the dish has to agree with.

What it actually is

In savoury cooking, this is your onion, garlic, ginger, scotch bonnet, thyme, whatever combination your dish calls for, cooked gently enough to release flavour rather than just soften. In baking, it's vanilla, citrus zest, warm spice, worked into the mixture early rather than dusted on at the end.

How it shows up across cuisines

A Jamaican curry base built on scotch bonnet, thyme, and pimento is doing exactly the same job as vanilla and lemon zest folded into a cake batter, setting the flavour direction the whole dish will follow. Different vocabulary, same gate.

Common mistakes

Why this matters

A weak base cannot be rescued by anything that comes later. The flavour built here is structural, not decorative, and no amount of skill downstream can substitute for it.
